Savory Chicken Taco–So Yummy Must Try

This recipe is so so so very yummy, super easy and very quick. There was left over which I ate with chips the next day.
All the ingredients you can find at Ralph's.

Prep Time: 5 minutes Total Time: 25 minutes Serves: 6
Ingredients:- Kroger® Canola Cooking Spray
- 1 Kroger® Wholesome @ Home Savory Slow Roasted Rotisserie Chicken, deboned and shredded
- 1 package (12oz) Kroger® frozen Steamable White Rice
- 1 can Kroger® diced Salsa Style Fire Roasted Tomatoes
- ½ teaspoon salt
- 1 cup Kroger® frozen sweet corn
- 1 cup Kroger® Quesadilla shredded cheese
- 1 jar (16 oz) Kroger® Verde Enchilada Sauce
- 1 package Kroger® Crisp Taco Shells
- Kroger® Sour Cream (optional)
Directions:1. PREHEAT oven to 450oF. Spray a 13x9 baking dish with cooking spray.

2. MIX all ingredients except taco shells into a large bowl. Spread evenly into baking dish.

3. BAKE at 450oF for 20 minutes, or until bubbling. Let stand 5 minutes.

4. SPOON into crispy corn taco shells and serve with Kroger® sour cream.

Chewy Caramel Cookies



  • 3 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon fine salt
  • 1 1/4 teaspoons baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup packed light-brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup caramels, such as Kraft (about 20), halved
  • 1 cup roughly chopped assorted miniature chocolate candy bars, such as Mr. Goodbar (about 16) I did one large Mr. Goodbar
  • 3/4 cup small button-shaped chocolate candies, such as m&m's, for decorating


  1. Preheat oven to 350 degrees, with racks in upper and middle thirds.
  2. In a large bowl, whisk together flour, salt, and baking soda.
  3. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, about 3 minutes. Beat in eggs, scraping down bowl as needed. With mixer on low, beat in flour mixture in three additions until combined. Beat in vanilla.
  4. Fold in caramels and candy bars.
  5. Using a 1/3-cup spring-loaded scoop, drop dough, 2 inches apart, on parchment-lined baking sheets I used parchment paper on the first batch I would not recommend if you have non stick pans.
  6. Bake 8 minutes. Remove from oven; immediately press candies onto cookies, then rotate sheets and bake until golden around edges and set in centers, about 8 minutes. Okay I cooked mine for 12 minutes total and did not press my M&M’s in. I don’t have time for that I just folded them in. Nor did I rotate my sheets.
  7. Transfer cookies to wire racks to cool.
So I would recommend folding all candies in at one time. Also cut Carmel first and break Mr. Goodbar first before you start. Also no parchment paper, don’t rotate and cook for 12 minutes total.
The Cookies were very yummy and best when the just can out of the oven like most cookies but with the Carmel it was best when they were fresh out of the oven.

Hunter his really into building with his Duplos. He comes up with all kind of stuff and does a good job with really getting what it looks like.

Colombo’s Visit


Brandon’s sister Meggan and family came to town in Sept. We got to spend time with them. Its was lots of fun. We don’t get to see them to often so its always nice to spend time with them when we can. Ryder is Jason and Meggan’s little boy he is getting big so cute and getting big too. It was fun to see the difference between Weston and Ryder. I am excited for them to come in December again and see the difference then. Jason and Meggan are really great parents to the little guy and Brandon was enjoying being Uncle Brandon.

Bug Invasion


Hunter and I met up with Christina and her sons Mason and Dustin at the Discovery Science Center to go to the Bug Invasion. I have tried to take Hunter to this place many times but it is always so crazy this day was not thank god!

The boys had a blast checking out all the exhibits. So I got to really read and some I didn’t being that the toddlers love to zoom through most things. Hunter is it to bugs right now so of coarse he was very interested.

Hunter and I laying on a bed of nails. The nails poke through the holes and rise up a good amount and then the go back down. It did hurt but felt very different.

This display was a 3rd display so I tried to capture it by putting the glasses over my lens of my camera. Did so so.

Dustin and Hunter in the Earthquake simulator. Dustin was so cute he kept pressing the buttons over and over so I think we were in a 30 minute earthquake.

Scan till you drop. They got to get the grocery cart which was heavy to push so a mommy or daddy is needed. The screen gave them a list of items that they had to get. Then they go to go around and scan the items.


Hunter loved the donuts and had to stop and ask for some. lol



Hunter’s Heaven!


The trash was on a conveyer belt and went through the trash truck. When it came out of the trash truck the boys got to separate it into the categories. For example they had to get all green waste and put it on the star on the trash can and then put it in the hole in the can. It was almost a race to see who could scan and sort through the trash the quickest and well Hunter won.
